Asian Coleslaw for 2

If you're looking for something pot-luck to take to a bar-b-que tonight or tomorrow, just quadruple this recipe and it will make 8 servings!

2 cups finely shredded or chopped Chinese (napa)cabbage
1/2 medium carrot, shredded (1/4 cup)
4 medium green onions, chopped (1/4 cup)
1/8 cup seasoned rice vinegar
1/2 tablespoon sugar
1/2 tablespoon water
1/2 tablespoon soy sauce
dash of ground ginger
1/8 cup dry-roasted peanuts, chopped

In large bowl, toss cabbage, carrot & onions

In 1-cup measuring cup, beat vinigar, sugar, water, soy sauce & ginger with wire wisk or fork. Pour dressing over cabbage mixture; stir to coat. Cover and refrigerate for at least 1 hr. before serving

Just before serving, drain liquid from salad. Stir in peanuts.

Servings are 1/2 cup each
